20 cl Gin

12 cl Lemon juice

12 cl Simple syrup

12 Thai basil leaves

25 cl Coconut milk

10 cl Sugar

3 cl Simple syrup -

3 Thai basil leaves

First, begin with creating the basil simple syrup. As with simple syrup, it can be wise to make a bigger batch at once. In that case, use the same ratio. Pour the simple syrup into a mixer and completely ravage the leaves until you cant see any bits. Then strain and save the, now thai basil simple syrup, for later.

cl Coconut milk -

cl Sugar

As with the previous step, this too can be wise to make a bigger batch at once considering the time and effort. Do also note that a cream siphon, which will be used later on, can require a bit of fluid to perform well. Consider this ratio as a guideline. If you cant find coconut milk you can replace it for cocunut cream, but make sure the cream is light and consistent. Pour the ingredients in a pot and let it cook while stirring. It's done once the sugar is completely dissolved. Then let the result be kept in the fridge to cool down, at least for a few hours.

3 cl Lemon juice -

3 cl Thai basil simple syrup -

Ice

Pour in all the ingredients into a shaker, including the thai basil simple syrup you created earlier.

Strain into a lowball glass over fresh ice.

Coconut mixture

Pour the, preferably chilled coconut mixture, into the loaded siphon. Shake the siphon a bit and you should now be able to top off with heavenly looking coconut foam.

As optional garnish, a thai basil leaf can gently be put on top of the cloudy coconut foam.
