16 cl White rum

8 cl Lime juice

32 cl Soda water

4 tbsp Cane sugar

40 Mint leaves

10 Mint leaves -

1 tbsp Cane sugar

Add the items to the highball glass, then use a muddler or the back of a spoon to gently crush the mint leaves together with the sugar. The goal is not however to crush the leaves to pieces, but only to bruise them slightly. This will enhance their flavor.

2 cl Lime juice -

4 cl White rum

Pour in the white rum and the lime juice, and gently stir a few times to help dissolve the sugar.

8 cl Soda water -

Ice

Top with the soda water and then place your prefered amount of ice(cubes or crushed) in the glass. Gently stir in a circular motion to combine, then use your spoon to drag some of the muddled mint higher up into the glass.

Garnish. Add a sprig of fresh mint to the top of the drink. Serve with a wide straw.
